Tandoori grilled chicken & avocado stuffed flax pita
Ever have those days where you don't have much on hand to cook with, but are feeling something healthy, satisfying and good? Me too. All the time. Tonight I was cooking for one and really didn't want to make a trip to the grocery store. I had a few things on hand that I wanted to incorporate (chicken, avocado, cauliflower and sweet potato), but didn't want the standard, 'Chicken and veggies' meal. Hmmm, after perusing online and finding nothing that used all four ingredients, I decided to make something up. I ended up with this tandoori grilled chicken and avocado stuffed flax pita. It was good, too (and easy - has to be easy, especially for nights like these)! Here's how to make it:
You will need:
Chicken breast
Avocado
Cheese (any kind, get creative!)
Tandoori sauce (you could use honey-garlic, teryiaki, whatever your lil' heart desires)
Pita bread (I like the healthy stuff and got a thicker, flax pita)
How to:
1. Get out the panini press or BBQ. Brush your chicken with your (tandoori) sauce and place on the grill.
2. Cut up some fresh avocado and slice some cheese.
3. Cut open one end of the pita so it's ready to be stuffed.
4. Prepare any side dishes (I made a baked sweet potato and grilled up some cauliflower and carrots, however, the pita is pretty filling so you might not need this)
5. When the chicken is ready, put a couple slices of your cheese on and grill for 30 seconds (to melt).
6. Stuff pita with chicken and avocado & enjoy.

I seem to be one of those people that others like to strike up a conversation with. I'm not sure what it is, but it happens all-the-time. And I'm so 'nice' I just go with it, and will end up having full conversations with strangers so as to not be 'rude'. What's up with that? I mean, if we want to get morbid, typically women can be victimized based on that quality, so it's always something to keep in the back of your head, but, back to what I was saying... so while shooting this outfit, thinking I was in a fairly desolate place, sure enough an older man comes walking out from behind this building with his miniature dog. First he looked at me, then he was just plain staring, and by the time he got close he must have felt that urge that people feel when they see me, he just had to strike up a conversation. He started slewing out facts about what the building I was standing up against used to be (a mink farm), and how much they used to pay in rent monthly ($10k), and how this one family owned it for years (since the 1800's). All the while I politely smiled and nodded and acted very interested. Meanwhile, I was actually freezing as I'd taken off my overcoat at this time and it was only 4 degrees Celcius. He finally walked away and I jumped back into my heated car and drove off. Sheesh.

As promised, here is a sneak peek at the goods I picked up during my weekend away in Toronto. I hit up my two favourite stores (H&M and Forever21) which we don't have in my city, and did very well. Items that are missing include the F21 striped mini (here, for salsa dancing), three long tanks from H&M (black, white, grey), and my new Aldo wedges. Now I'm going to try and stick to my resolution and wear these items immediately. I've already worn five things (in four days) - I'm getting good!

Okay, so, I don't want to jinx anything, and I just might be doing so by writing this out, but, the weather has been so frickin' nice lately. I mean, sure, I was away for the weekend, but, since coming back, nothing but blue skies. I zipped out on my lunch hour to snap these photos as, hello, when I leave it's almost pitch black out, which is a huge downer.. and obviously not ideal for photo taking. Ugh. Regardless, I'm going to lap up the warmth while I still can and if that includes running around behind random buildings while a home-less man walks by just to get some outfit shots, then so be it.
