Sunday dinner usually consists of some sort of take-out: butter chicken, chinese, shawarma... So when husband zipped out this morning and came home with lots of food, I was pleasantly surprised when he said he was cooking up a big meal tonight for us and his buddies (Sunday = Football Day).  Of course, I got roped into helping, but I don't mind.  We have a little routine when cooking anyways, he does the meat, I do the veggies, it works.  He bought us some amazing (massive) steaks and fresh veggies.  The meal turned out great, the boys enjoyed theirs with their football and me with some Sex & the City.

One of my fave 'healthy-easy-doesn't-take-too-long' dishes is spaghetti.  I don't follow a recipe, the only prerequisite is that it is full of lots of fresh veggies (I like chunk to my spaghetti... and crunch for that matter!).  It's pretty simple, so long as you are a good multitasker for a solid 30 minutes.  So, get to the groccery store, grab your fave veggies, some ground beef and tomato sauce and let's get to work.

Cook up one package of lean ground beef...

Mince garlic and sautee in the wok with some olive oil...

 Grab your fave veggies, and chop 'em up.  I like colour and lots of mushrooms!

 Chop the onions first and add them to the garlic sautee...

 Continue stiring the beef...

 Once the veggies have sauteed together for about 5 minutes,
drain the fully cooked beef and add it to the wok...

 Grab the Prego (told ya I like mushrooms)...

 ....Add it to the mix....

 Let it simmer and let the flavours come out (this is a great time to add spices, salt & pepper)...

Grab your pasta (I like to switch it up, but this night I was feeling the traditional spaghettini)...

Boil it till al dente

 Pop the garlic bread in the oven (had to put cheese on ours)...

My mom made the sweetest suggestion to my sister and I that we have a girls dinner before the wedding.  Sort of a, 'Last girls dinner before Amanda gets married' - isn't that so sweet?  At the last minute, she asked if my Dad should come, but we decided to keep it just the girls.  It worked out nicely too as she planned it for the night M was out of town for his (second) bachelor party.  We went to Milestones (one of my fave restaurants) and had a delicious dinner.  Afterwards, we headed back to my sister's place for some wine and chatter.  It was a fabulous night - thank you, Mom!

Our friends MP & AT recently got engaged!  After over six years together, and two kids, he finally popped the question in the Bahamas this spring.  We are so excited for them!  The other night we went to an engagement party for the happy couple at a fabulous steak house.  There was at least 30 people there including friends and familly.  The generous couple even bought everyone their appetizers!  How sweet is that?  Congratulations MP & AT!
